About the Mixolydian scale
Mixolydian is the fifth mode of the major scale: G to G on the white keys. In medieval church music it was the seventh mode, with its home note on G.
What makes it sound the way it does
It's major with a flattened 7th. The ♭7 gives a major chord a whole step below the root (♭VII), and the root chord becomes a dominant 7th when extended.
